Baker Grego Montalbán Sánchez is from Granada, Spain and has been a professional chef for 25 years. Grego did a one year sabbatical with his family in southern Sweden where he did an intensive apprenticeship with one of Sweden’s leading bakers where he learned the art of sourdough baking and the delicate skills involved in baking Swedish buns.
Hanna Lӧfgren is Australian-Swedish and met Grego in Spain.
After a year living in Sweden in 2019, Grego and Hanna were inspired to fill the need for quality bread and baked goods in the regional area in which in Australia and opened The Invy Baker, a micro-bakery in Inverloch.
