Santa Lucia, as seen here, is often shown holding her own eyes.  Her eyes are said to represent the light of her heart, which on the darkest days (literally and figuratively) she can illuminate.  The question is, was Santa Lucia persecuted and her eyes removed?  Or was she a martyr, who removed her own eyes to share her light before the sword caused her untimely death?  Regardless, it makes a great story, great imagery, and a great conversation piece with this tea towel that serves for function and decoration.
