The spices are well balanced and the 'cakes' (as they like to call them in Sweden) have a nice brittleness.  Nyåkers gingerbread is baked in the same way as they have always been made - at home in Västerbotten (a Northern Province in Sweden).

In the hinterland of Norrland, miles from the nearest larger community, lies Nyåker. There are endless gravel roads and pine forests and marshes. It is home to a little over a hundred inhabitants. And here, gingerbread are baked that year after year wins prizes.

Bengt and John created the secret gingerbread recipe in 1952 that is still used today. All ingredients are Swedish and of the highest quality. The spices are mixed by hand and the gingerbread is as close to homemade as you can get.
